BEHIND THE FLAMES & BLADES: MEET THE CHEFS

Executive Chef Ken Chaw, from Winestone, known for his love of bold fusion flavours and anything kissed by flame, he brings smoke, char, and drama to the plate. His standout? Course 5: Sockeye Salmon, seared to perfection and served with cauliflower purée, whisky-roasted carrots, mushy peas and a hint of dill oil. It’s a flavour-packed dish with swagger.

On the flip side, Senior Sous Chef Collin from The Gyu Bar is all precision and poise — hands sharp as knives and flavour instincts sharper. His course 4: Shabu Shabu-style A4 Miyazaki Wagyu is a masterclass in balance with the tender Wagyu sirloin, Japanese spinach, sweet Hokkaido milk corn and a zingy Miyagi ponzu. It’s clean, refined, and dangerously addictive.
